Using MAC Addresses to Track Impressions?

Is it possible to use something like the Pineapple MKVII on a mobile advertising vehicle to ping devices near it and track how many people are close enough to see the ad? The ultimate goal would be to set up multiple devices in vehicles as well as business locations to track if particular mac addresses went to a business shortly after being exposed to an ad.

I haven't used the Pineapple or had access to any other devices/programs that would be capable of tracking and storing mac addresses on a moving vehicle, any recommendations would be welcome.
