Is there a way to secure a phone from access to threats from a Kali linux?

I have seen how small access can lead to so many exploits, like for example: mitm.

As @dark_pyrro says, we would need more information on your threat model. 

If you said, how could I protect against a knife, we would need to know things like: 

Targeted attack

Random attack

Mugging 

Knife being used to chop meat in restaurant kitchen

Each of those is defended against in a different way or does not need defending against in the first place.

Keep your phone updated. Learn to recognize phishing attacks. Install antivirus on your phone. Install an IPS on your network if you're really paranoid, but strong WiFi passwords and using a VPN on public networks should prevent against MitM attacks effectively.
