Noob question, can I use a Pineapple to track nearby devices?

Long story short, I’d like to be able to track devices that pass by a specific physical location. Can I achieve this with a wifi Pineapple? 
 

I’ve done a bit of research but I can’t work out if a users device will connect to the pineapple without a users input and while they’re not connected to another network. 
 

What I’d like to happen is a device goes past and I’d just like a log eg 00:00:00:00:00:00 connected at xx:xx and disconnected at xx:xx. If I can do it with a pineapple, is it possible?

Yes, and PineAP will log SSIDs from probe requests.
