is it possible to spoof a mobile carrier into a different one

Let law enforcement be the ones that try to hunt down scammers. If you try to "SIM jack" (or whatever), you're putting yourself in an equally bad (or even worse) position since you most likely will not be aligned with the laws of the country you reside (or live) in.

You're not going to fool your carrier into thinking that it's another carrier, and you're not going to simjack by spoofing an esim. As dark_pyrro said, don't risk prison yourself to go after a scammer.
