Using the OMG cable can I launch a installed app and simulate touch along with keystrokes

Hi

We want to launch an app and then process simulate human action by pressing buttons and keyboard stroke on the app and performing a task. Eg we want to open outlook, click on new email, type in an address, subject, body, attach a random image from the gallery by swiping to a random point and clicking on whatever is in the middle of the screen.

 

just an example, how do we go about that? Is it possible with the OMG cable?

is Appium better for this? How do we prevent an app from recognizing that appium is controlling it, some apps can recognize and prevent any automation.
